Sparkling Citrus Refreshers

This tangy sparkling drink is the perfect thing to drink during the heat of summer.

There's nothing I like better than drinking an icy drink during the heat of the summer.
Seltzer? Check
Lemonade? Check
Sparkling Citrus Refresher? Check, check, and check!
Ironically, my favorite version of this drink is made with blood oranges, despite their season peaking in the dead of the winter. Deeply crimson, almost burgundy, this delicious citrus is sweet, tangy and floral, and gets its unique color from a high concentration of anthocyanins.

In a pinch though, I'll use grapefruits instead. (Less visually appealing, but equally as delicious.)
There’s a cafe near me that sells these refreshers for a pretty penny, but pumps them full of artificial “blood orange” or "grapefruit" flavor.
You’ll find none of that here.
This gorgeous ombré drink is sweet and sour, delightfully effervescent, and positivity bursting with real citrus flavor.
Honestly, you’ll be making this so much, it’s worth it just to triple the recipe.

Iced Sparkling Citrus Refreshers
Ingredients:
Citrus Pulp:
● 4 blood oranges or small grapefruits
● ½ cup sugar
● Pinch salt
Drink Preparation:
● 2-3 tbsp citrus pulp
● 8 oz cold seltzer
● Ice
● Sliced blood orange or grapefruit, optional, for garnish
Directions:
Pulp:
Use a knife to peel your citrus of choice along the fruit's curve, exposing the flesh inside.
Slice between the membranes to release each segment of the fruit (this is called supreming), then separate each individual juice vesicle and place them in a container. (alternatively, you can also slice the segments into really small pieces)
Combine fruit with sugar and salt, and allow to macerate for at least 30 minutes and up to 2 weeks.
Drink Assembly:
Place macerated citrus at the bottom of a tall glass.
Top fruit with ice, then slowly pour seltzer over the ice.
Garnish with extra fruit slices, if desired.
Stir gently to turn the drink ombre and to release all the flavor.
